ngredients – Serves 3 –

  • New potatoes … 2 (about 220g)
  • Cream cheese … 60g
  • Prosciutto … 10 slices
  • Mayonnaise … 2 tablespoons
  • Soy sauce … 2 teaspoons
  • Rice vinegar … 1 teaspoon
  • Olive oil … 2 teaspoons
  • Coarsely ground black pepper … to taste

Instructions

  1. Wash the new potatoes thoroughly while keeping the skins on, then cut them into bite-sized pieces and place them in a heatproof bowl. Cover loosely with plastic wrap and microwave at 600W for 5 minutes.
  2. While the potatoes are still hot, add the mayonnaise and mash them. Mix in the cream cheese until well combined, then wrap the mixture in prosciutto slices.
  3. In a separate bowl, combine the soy sauce, rice vinegar, and olive oil to make a dressing.
  4. Arrange the wrapped potatoes on a plate, drizzle with the dressing, and sprinkle with coarsely ground black pepper before serving.
