This is the recipe for “New Potato Gratin,” introduced on the July 21, 2024 episode of TV Asahi’s Aiba Manabu, featuring Aiba-kun’s creation from #553 “Manabu! Seasonal Local Cuisine – New Potatoes from Sodegaura.”

Instructions
- Wash the new potatoes thoroughly while keeping the skins on, then boil them in salted water (to taste) for 30 minutes.
- Once cooked, peel the potatoes while they are still hot and cut them in half.
- Grate the onion and garlic.
- In a frying pan, add the onion, garlic, and butter, then turn on the heat. Sauté over low heat for about 3 minutes, until the onion becomes fragrant.
- Add the milk, heavy cream, and the halved potatoes to the pan.
- While still on the heat, mash 2 of the potato halves with a fork.
- Season with salt to taste, then remove from heat. Arrange the remaining potato halves in the gratin dish and pour the sauce over them.
- Bake in a preheated oven at 200°C (392°F) for about 10 minutes, or until golden brown.
- Sprinkle with dried parsley before serving.
