“Poka Poka” Demon Slayer Somen Salad 【June 16】

This is the recipe for the “Demon Slayer Somen Salad” by popular cooking expert Chinami Hamauchi, introduced on Fuji TV’s “Poka Poka” on June 16, 2024. It’s the perfect dish for hot days or when you have little appetite.

ngredients – servings 2 –

  • Somen noodles: 2 bundles
  • Tuna in oil: 1 can
  • Okra: 5 pieces
  • Cucumber: 1/2
  • Red leaf lettuce: 50g

Dressing

  • Marmalade: 1/2 tablespoon (or more)
  • Mayonnaise: 1 tablespoon
  • Soy sauce: 1 tablespoon
  • Black pepper: to taste

Instructions – Cooking time (15 minutes) –

  1. Slice the cucumber into thin rounds.
  2. In boiling water, cook the somen noodles and okra together for 1.5 minutes.
  3. Add the cucumber for the last 10 seconds of boiling, then drain.
  4. Wash the noodles thoroughly to remove any stickiness, then cool them in ice water and drain well.
  5. Wash the red leaf lettuce, dry it, and cut it into bite-sized pieces. Trim the okra and cut diagonally.
  6. Prepare the dressing: In a bowl, mix marmalade (1/2 tablespoon or more), mayonnaise (1 tablespoon), soy sauce (1 tablespoon), and the oil from the tuna can. Tip: Mix the thicker ingredients first for easier blending.
  7. Place the somen noodles on a plate, top with vegetables, drizzle with the dressing, and sprinkle black pepper to taste.
